Yogurt making - will heat over 140 kill the Probiotics (good bacteria)?!


Question: I got it too hot when I was incubating it. It was only for 5-10 minutes, but did I kill the good bacteria? Is it worthless now?

they can only stand heat up to 115-120

Not likely. It will make it more sour. In India the inoculated milk is allowed to stand at ambient temperature for 8 to 12 hours. Sets beautifully.
