Niacin reacts with a fatty acid in your system, if the levels of that fatty acid are low, then a 'switch is flipped' in your immune system - it is your immune system which is causing that flush. When you do not experience that flush, it is because your body had enough of that fatty acid to prevent the second part of that (the immune system response) from happening.
The quantities of that fatty acid can fluctuate in response to many variables, including diet. Eating more fish high in omega three fats would prevent that response to some degree, depending on the dose of the Niacin.
