Just from the top of my head: Sage is antiseptic, strongly drying, dispering (which means it breaks things up, especially mucous, old fats, congestion and stagnation, and gets them moving). It is antihelmintic (sp?, which means it assists in getting rid of worms and wormlike intestinal parasites), and is also an antiflatulent (which means it helps to dispel gas from the body, which is one of the main reasons it is cooked with beans alot, especially white cannellini beans in classic Italian and Provencial French cooking.); It is a cholagogue and is used culinarily with such fatty foods/meats such as pork, duck and goose for good reason. As it is a cholagogue, it cuts fats and mucous in the body and helps in their digestion and expectoration/expulsion from the body. It stimulates both the liver and the gall bladder, especially the gall bladder, and so is an excellent herb for someone who is billious, or has gout, or chronic indigestion b/c of excess consumption of fats. It can heal all manner of sore throats, mouth sores, canker sores, upset stomachs (but remember anything taken to its extreme becomes its opposite, so if one takes too much sage or too strong a tea, digestive upset, nausea, diarrhea, vomiting--all are possible.) It is used spiritually, especially by Native Americans, usually, tho' not always, in combination with sweet grass to cleanse a space or to cleanse people's spirits and auras, to make whole and holy again, to purify. It would not necessarily be the herb of first choice for someone who is already excessively red, dry or hot as sage will increase these qualities in a being. It would not necessarily be the herb of first choice for someone who is red in the face, angry, choleric, excessively bilious again, as it could aggravate these conditions. It has been shown to lower blood sugars in diabetic folks.

The oils sage have antiseptic, astringent, and irritant properties. This makes sage useful in treating sore throats, mouth irritations, and possibly cuts and bruises. Experiments in 1939 showed it had estrogenic properties, which may have some connection to the herb's reputed ability to dry tip milk. Research has shown it lowers blood sugar in diabetics. Sage is used to relieve excess mucous buildup. It is beneficial to the mind by easing mental exhaustion, soothing nerves, and by strengthening the concentrating abilities. In a lotion or salve, it is useful for treating sores and skin eruptions, excessive sweating, and for stopping bleeding in all cuts. Chewing the fresh leaves soothes mouth sores and sore throats, as will sage tea. It is good for all stomach troubles, diarrhea, gas, flu and colds. As a hair rinse, it removes and treats dandruff. Sage combined with peppermint, rosemary, and wood betony provides an excellent headache remedy. It is used to regulate the menstrual cycle, to decrease milk flow in lactating women, aids in treating hot flashes, and is used as a deodorant. The essential oil is used in aromatherapy to cleanse and purify the air. In a carrier oil, it makes an excellent deodorant.

Sage also contains terpene, camphor, and salvene. An essential oil is extracted from freshly harvested leaves by steam distillation and this is used in seasonings for pork sausages, processed foods, perfumes, confectionery, mouthwashes and gargles."
