Are there nitrites in substitutes for regular nitrite containing meats?!


Question:

Are there nitrites in substitutes for regular nitrite containing meats?

I mean does turkey sausage, turkey hotdogs, and any other products made with turkey have nitrites? Is there any such thing as specially (healthily) made meats like lunch meats, that did contain nitrites, but after being made healthy don't have nitrites any longer?

Answers:

Well, first we have to know what is nitrite, and its usage purpose.

Nitrite in meat greatly delays development of botulinal toxin (botulism), develops cured meat flavor and color, retards development of rancidity and off-odors and off-flavors during storage, inhibits development of warmed-over flavor, and preserves flavors of spices, smoke, etc.

So that means nitrite is a rather important additive for cured meats, no? As long as its meat- doesn't matter what type, processed and/or cured meats WILL utilise the properties of nitrite.

I don't understand what you mean by "made healthy", but I'm guessing that it means to have the nitrites removed, though I'm not sure how exactly that process is done, that is, IF that kind of process exists.

So in a nutshell, as long as its a cured or smoked, or even processed, it will have a high chance of containing nitrites because the only meats that do not require nitrite for preservation are frozen meats. Remember, ther aim of te nitrite is to preserve and inhibit bacterial formation.
