I didn't find a breakdown of how much of each chemical is in a tablet of Glutaphos in the websites one can find about it through Google. It contains glutamate, dicalcium phosphate, thiamine and B12.

People have been taking in glutamate for a long time through soy sauce, Worcestershire sauce and monosodium glutamate in Chinese and other foods. MSG has been associated with a "Chinese restaurant syndrome" beginning about 15 minutes after ingestion:

burning sensation in the back of the neck, forearms and chest
numbness in the back of the neck, radiating to the arms and back
tingling, warmth and weakness in the face, temples, upper back, neck and arms
facial pressure or tightness
chest pain
headache
nausea
rapid heartbeat
bronchospasm (difficulty breathing)
drowsiness
weakness

People prone to migraines can have their migraines triggered by MSG. Glutaphos is just a different salt of the same chemical so presumably you could take enough of them to get the same thing.

While glutamate is a critical neurotransmitter in the brain and B vitamins are also critical, they are easy to get in one's diet and there's no reason to think that pumping in a lot more of either of these does any good. The makers of MSG would seem to be looking for other ways to market their product to make up for MSG not being in foods as it once was.
