Weights build muscle by forcing it to its extreme and causing the muscles to tear. When they repair themselves, the body automatically adds more muscle tissue around the scarring area, thus you get bigger (but often less flexible).

This repair takes a couple of days. There is no point in trying to do weights on muscles that haven't recovered correctly.

Football, wrestlers etc build muscle more slowly, but the muscle they have is lean useable stuff. You wont get big playing football/wrestling alone, but you'll get very very fit as the muscle learns and adapts to prolonged periods of exercise. You can train day after day on tired muscles this way. However, you WILL need a rest day per week, and at least one week a month where you cut back training to allow recovery. Else you'll injure youself.

you really should rest them to give them the chance to get bigger

You are damaging/tearing your muscle tissue when you workout, and they need a day or so afterwards to repair themselves. This is the process that makes them bigger and stronger, and resting is an important part of the process

If you are training properly, your muscles are completely spent after your workout. If you tried to work the same muscles the very next day, you would have a miserable workout. Your strength and your energy levels would be significantly compromised. Since it is impossible to do an honest total-body workout, the day of rest can be used to train muscles NOT trained the day before.

Time off gives you time to feed your muscles (assuming you are eating healthily or eating a body builder's diet) so that you can shorten your recovery time and build muscle tissue. Additionally, time off allows the small tears in your muscles to heal, and, your glycogen leves can be restored.

Football players might play hard, but they are not working any muscle group to utter exhaustion and depletion. Even Tour de France cyclists get days off to rest their legs and they are extremely elite athletes.
