Is it a visual attraction? Verbal (sound of a Chinese accent)? Social (Chinese are just soooooo.... [insert some stereotype here])? Many people are attracted to people of a different race or ethnicity because of allllll sorts of reasons. Guys are very visual, and because of this, many men have a visual attraction to certain ethnic looks. It's essentially a fetish-- like "partialism"-- a type of fetish associated with a preference for certain body parts. Instead, in this case, it's the visual appearance of the entire body.

Verbal attraction is similar. I dig an Australian accent.... it's nothing specifically about Australians (as far as I can tell..), but that accent is great. Similarly, I am not attracted at all to German (I speak it though), and Vietnamese almost drives me nuts.... it's just the way I'm wired.
Social attraction is probably more of a deeper psychological issue. An examples: Some American men are strongly attracted to the traditional subservience of certain Asian women. (Alternatively, of course, many American men don't like a subservient female, so this is only an example). Social attraction is often a result of stereotypical (even racist) opinions that an individual may have about people of another culture.
If it's not the look or language that attracts you, I suggest you quickly list 5 things that represent "Chinese" to you.... not what attracts you to Chinese, but opinions you have about all Chinese men (or women... you didn't say if you were attracted to one or both). THEN look at the list and determine if these 5 things are particularly attractive to you. If you find Chinese men/women ATTRACTIVE for these reasons, then you hold those attributes as stereotypes of Chinese men/women, in general.
