A short explanation of how the male reproductive system works would be a good start.

but be open minded and just tell him that when a guy grows up stuff start to happen just like girls get their period.

I think yes its always good to talk to your kids about things like this early, helps build a stronger relationship. Also he wont be freaking out if it every happen again Teens think there is something wrong with them when their body starts to change. Just talk to him it might be uncomfortable but it resolves the issue.
I'm glad your 16 y/o is so honest with you. You need to explain to him what a wet dream is, I'm surprised he doesn't know what one is.

A good explanation, is that it is normal for guys his age to have something like that happen. I think it may be a good idea for the two of you to have the sex talk. Obviously you have never had never had this talk with him. or he would not be confused. I know its probally hard having this talk, but it needs to be done. Tell him the basics on sex, and the basics on getting aroused. And also let him know, he is maturing and this is normal. Dont ever let him think he is abnormal. This is the time. Have the talk, and be a parent. If he thinks it abnormal, you could have alot more problems!
Just say that when you have a nice dream about a hot chick lap dancing on you. Then you wake up with seman on your bed. That is how you can tell him.
