For the most part, if a young man wants a vasectomy, would the doctors be nosey and ask for their identification and age!?

Yes they can ask for ID!. They have to if you are using insurance to pay for it!. In some cases it may also be required if government funding is used!. No it will not be illegal for them to ask!. No they are not going to spend the time checking into your life history!. That would cost more than the whole surgery!. They would not waste the resources!.
It also is not illegal for them to refuse to give you the surgery!. They can refuse you for any reason they want!. It makes no difference what your age is!. Any business, except an emergency room has the right to refuse any customer any time they like!. That is part of doing business in the USA!.
