When you ejaculate you shoot both seminal fluid (semen) and sperm!. The seminal fluid is produced by the prostate and another organ, I forget the name, and can be almost clear - or as you said, not fully white!. Your sperm will be thicker and more white!. The answer to the first part is fairly simple in that it is the same muscle that is stimulated during masturbation which also is employed during urination !.
