I don't recommend you leave the skin behind the head because it is at risk of getting stuck!. To stretch the skin, pull it back daily or twice daily as far as you can, but then replace it!. If you do this consistently it should get better in a few weeks!. About the sensitivity, the more you touch the head the less sensitive it will get (but still feel nice), try running water gently over it or rubbing it gently!.
