I've only been with uncircumcised guys, and now I don't know how to give him a hj or bj. How far back should I pull his foreskin? Should I avoid touching his gland directly? And during oral, should I pull back the foreskin or not? I feel like I'm back at square one. help!

One should be able to pull a foreskin all the way back so the glans (penis head) can be completely exposed. When the foreskin's pulled all the way back it kind of rolls into/merges with the shaft skin, so there's a max limit.
The super sensitivity is normal for a lot of uncircumcised guys. Asking him what feels best might be a good idea. Usually even if a guy's uncircumcised, he can still tolerate a bit of direct stimulation of the glans, but you might need to be gentler. As for oral, it depends on the guy. Some guys might like the foreskin covering, others might like it pulled back. It depends; again, if you're not sure, ask him.
