Answers:

It's good that you've resolved your phimosis. Just make sure to pull back the foreskin fully so you can wash underneathe there everyday during a shower/bath with water and a mild soap to help prevent it from coming back. And by moving it back and forth you help it to further loosen a little.

The glans (penis head) can be very sensitive the first couple times you expose it. It's mostly because you're not used to it, as it's normal for it to be more sensitive in uncircumcised guys.

To decrease the sensitivity a little, you could just pull back your foreskin and expose the glans to the air for a few minutes each day. Washing it helps you to get used to it as well, but it might sting the first few times you do so. Make sure you go about it slowly and gently. If rubbing the glans is too much, just rinsing it with water is okay at first.

There's nothing to worry about as everything's perfectly normal. As long as you keep it clean (and expose it periodically), the stinging feeling should fade away within a month until it becomes bearable.
