Gaining muscle?!

Gaining muscle?

Ok, I understand and know cals, carbs, protein and how much I use each day based on my age weight and level of activity. I would amagine I could increase my caleries 500 a day and in turn I should gain 1 pound of weight - So if I work out allot then does that mean if I gain anymore than 1 pound of weight the extra is muscle, or does the extra fat get used up with the developement of muscle. Bottom line I am not sure how to go about tracking my muscle gain and would like some advice from bodybuilders on how they keep track of their muscle gain. I would like to gian 2 pound a month in muscle, I will train every day, and at the gym every second day then strip off any extra fat gained at the end of the month, as I would like to keep myself toned as much as possible and see my progress as I go.
