How does your digestion and your body change without a gallbladder?!
Question: Cholecystectomy doesn't really alter the way your digestive system handles fat metabolism. Ordinarily, the gallbladder stores the bile produced by the liver and bile is released in small amounts when fat is ingested. Without the gallbladder for storage, bile is released continuously into the small intestine, where the majority of digestion takes place. The gallbladder is not an essential organ so removal does not result in dramatic changes.

The gallbladder stores bile from the liver. Bile digests the fat in food. Some people have problems with fatty foods after the gallbladder is removed.
