Who is allergic to gluten and wheat???!

Question: I may be allergic to gluten or it may be wheat. I stopped eating wheat for a long time when I realized it might be making me sick (along with cow milk products as well). I felt a lot better, but the doctors can't test me now for celiac disease since I stopped eating wheat (even if I eat other gluten-containing foods, wheat contains the most gluten and therefore you need to eat this frequently). You have to eat wheat products for 6 weeks before it will show up on a blood test or endoscopy. I was too ill after three days and had to stop. If you have a wheat/gluten allergy you probably have milk sensitivity as well. It could be lactose intolerance or it could be sodium caseinate, which is what I'm allergic to. Milk contains LARGE amounts of sodium caseinate and this is also found in "non-dairy products" (which really mean lactose-free). While you can do your own test like me and stop eating wheat for a month, see if you feel better and then gauge your health once you start eating it again (it can take a week or more to start affecting you and it will take longer than a week for you to feel better after you stop eating it), I recommend getting the doctor's testing first because they will NOT treat you or help you out with it if they can't get a positive test of this. Sometimes spores are left over in the intestines from celiac even after you stop eating wheat and you have to get more treatment to help you out. I may be having this problem, but no doctor will help me because I have no official test showing this allergy even though it is very obvious I have it. Another downfall to doing a self-test is I don't know if it is wheat or gluten. I still have small amounts of gluten like soy sauce and can't tell if this hurts me or not (it would for celiac and wouldn't for wheat). Please see the doctors first about this before you do anything on your own.

Gluten
If you have Gluten Allergy then you suffer from Allergies Type 1, also called Contact Allergies. The Greeks first described this disease in the 2nd Century AD and they called it Koiliakos Disease which means suffering in the bowls. Today the disease is called Coeliac Disease, which is derived from the Greek word Koiliakos.

Coeliac Disease and being allergic to Gluten are similar allergies but not exactly the same. Coeliac disease is a hereditary allergy to gluten that caused damage to the intestinal lining of the small intestine. Gluten allergy does not damage the small intestines but cause many of the same symptoms as Coeliac disease.

Gluten contains a protein that is found in most grains such as wheat, rye, barley, and to a lesser extent oats. When the grains are ground into flower the gluten is what gives the final baked products its strength and elasticity. Without gluten bread is heavy and dense. Depending on the type of grain being tested, different quantities of the gluten protein are found in different grains...To read the rest of the article click on Read more
