Have you tried to find out WHY your iron levels are low? As others have highlighted, it's not necessarily down to diet, but may have some underlying cause. Rather than trying to 'pump' your levels immediately prior to donation, I'd suggest you visit your Doc to find out the reason for the problem.

Maybe a week wasn't long enough to make enough difference. If it's often low perhaps a check with your doctor night be in order?

if u eat liver on the day of ur donation it bumps ur iron level up on the day not over a week

I am a type 2 diabetic and had the same problem. I was told by the Red Cross to eat all those wonderful things that help boost your iron level, and it didn't help. I started to research it on line and found that diabetics taking oral medication like Metformin can end up being deficient in vitamin B12 and Folic acid which manifests itself as having a low iron count. A simple blood test will confirm if you are lacking vitamin B12, or you can simply take B12 and Folic acid tablets orally since neither will accumulate in your blood and are not dangerous to take. On the other hand, vitamins A,D,E, and K can be toxic and should be watched carefully

try iron pills, i took them and within two weeks i was able to donate blood

Perhaps you need to stay on a diet of dark greens, liver and other iron rich foods a while longer.
