Question: im doing my biology project on rabies, and i'd like to know if someone gets bitten by an animal known with rabies, and the bite or lick, ect goes unseen &/or untreated, will they contract rabies for sure, or is it only a really high possibility?

If you are certain that the animal has rabies and if it has bitten a person, then certainly the person will eventually be contracted, most especially if it is an open wound or if there is bleeding. Rabies spread through the blood stream. Rabies mainly travels through the spinal cord and finally the brain, where it damages it later on if the person is left untreated.

If the person was bitten on the lower extremities (lower part of the body) then the spread of the virus is less hazardous, then with a person bitten in the upper part of the body. Remember, the main part of the body that the virus wants is the brain. So, the farther the wound from the brain, the lesser damage or the slower the movement of the virus, while the nearer the wound is...like the face or even the head, then evetually, the rabies may eventually damage the brain. So it is best to have the anti-rabies injections right away.

No you don't automatically contract it. You would need to immediately go to an emergency room and there's some type of medication they can give you that can prevent it from infecting you. But if the person waits too long then they're in trouble.

Whether the animal is definitely known to have rabies or not the person needs to be treated because the disease is so terrible that no one should have to go through it.

If a person is bitten by an animal that is rabid, then yes, they will contract it. The only way to know for sure is to have the animal tested for rabies, but treatment must start immediately which is why they will start treating a suspected case (i.e. the animal is showing advanced signs of rabies).
