It sucks to be.... gluten free?!


Question: i have celiac disease. ive had it my whole 20 years of life but they just found it in june of 07, how nice.
so now that i am use to gluten filled food, i cant eat it. enouch complaining. question time.

i need recipes that are easy and are not time consuming. I dislike seafood, so no fishy stuff :).

Its just hard because gluten free is expensive and I just moved out and am paying for college.

any advice.

Me too. Yes, eating gluten free is expensive in that you can't use the "cheap" fast foods, e.g., mac and cheese or PB&J sandwiches (or any other sandwich made in the traditional way). But there are a few simple modifications that help: For a quick meal/sandwich, use white corn tortillas as the 'bread' and be sure to warm them first for best flavor/results. The flavor is not offensive and it won't hurt your gut. You can make a decent pizza with them, too. Learn to love fruit and vegetables; there are so many ways to prepare them that it's endless. Basically, you have to cook from scratch to control what's in your food but that doesn't mean you have to spend all day cooking! Just be sure to keep GF things on hand. The Diamond Nut Co makes snack crackers that are GF and taste wonderful for when you crave a snack-type food and you can make it a meal by using cheese, dips, whatever that you've made or spent $$ for GF. Soups are easy to make and you can freeze individual portions to have on hand.
There are more and more GF options becoming available and at more competitive prices. Cookbooks oriented toward GF quick meals and dishes, too. Do an internet search for them...AND look up the GF support groups, such as the below...

1 cup sugar
1 cup peanut butter
2 eggs
combined sugar and peanut butter, beat eggs, mix eggs with
sugar and peanut butter. Spoon on to cookie sheet and bake at 375F about 10 to 12 minutes, did not forget the flour
because it has none. Very good. Give it a try.
