What dinner can I fix for my diabetic husband?!


Question: My husband was just diagnosed with type II diabetes. I read a couple of books that recommend eating very little rice and wheat products; they say that even whole wheat and brown rice are broken down very quickly into glucose. I read that pasta, because it is made with semolina flour (durham wheat) is alright as long as it is eaten in moderation.

I bought two diabetic cookbooks, but both are filled with recipes using plenty of flour, both white and whole wheat, and rice, both white and brown. AAARRRGGGHH!!!

I'm at my wit's end. Is there a recipe someone can share for a tasty main dish that uses no rice or flour? Thanks. :)

Try the South Beach Quick and Easy Cookbook. It has low carb recipes that should help and they aren't too hard to prepare.

Make sure that whatever you prepare is balanced. Make sure he gets enough carbs (wheat, red potatos, potato skins), protein, good fats, and vegetables.
DO NOT SERVE WHITE FLOWER. This is processed in his body the same way a candy bar is. The sugar will go right into his blood stream. Substitute white flower with wheat.
Also, speak with your husband's physician about the topic. He will give you plenty of information that is right for his condition.

Look for a book that has carb ratios for the foods. Pasta in 1/2 cup portions is usually ok, but may not be until he gets under control. Stay away from simple sugars. Look for LOW FAT recipes. Eat moderate amounts of cooked vegetables, fruits and meats. Look for the Mayo Clinic Diabetic Diet. They have online advice and used to have a cook book. Type II Diabetics need to watch proportions. Learn to help him so he doesn't feel it is just his battle. Support him, reassure him, but learn to help him out. If there is a local diabetes clinic make an appointment for you, him and any family members with their dietitian. Many Type II learn bad eating habits growing up. Limit alcohol to very special occasions and 1 drink only. Dump the sugar. Avoid sugar substitutes, they tend to give the diabetic the false impression that what they are doing is ok as long as they have a diet pop or dessert. Limit starches to 1/2 cup servings a meal. Eat fresh veggies and things like apples, pears or a small amount of fruits for snacks. (Not dried fruits, they are full of carbs) WATCH PROPORTIONS. Hope this helps.
