It depends. If you have celiacs disease, every time you eat gluten you're poisioning your body. You'll most likely have stomach pains, cramping, bloating and change in toilet patterns.
If you have gluten sensitivity, or have been advised to not eat it, then cramping, stomach pains.
If you have no allergy, sensitivity or etc, then nothing. Food that contains gluten also contains a lot of fiber which helps keep you regular.

If I eat gluten, I know it and I have pains all over my body, head ache, sore tummy, cramps, tired, groggy etc.

If you have celiacs disease and keep eating gluten, you increase the risk of malnutrition as your body doesn't absorb nutrients and also you increase the risk of bowel cancer by 1%.

By ignoring any food allergy or intolerance in our bodies and continuing to eat them, we are inhibiting the effective absorption of not only the thing we are allergic to but a large portion of everything else we ingest.

I knew a woman who had Celiac Desease, in which she had to also follow a gluten free diet. If not followed, you could have symptoms like diarrhea, abdominal pain, bloating, or numerous other symptoms. If your stomach does not tolerate gluten, eating it could also damage your small intestine, possibly leading to surgery. Try to substitute rice flour for wheat, and it's really good. I'm sure you can find great recipes on line that are gluten free.
