I think the main precaution would be to ensure ALL the kitchen staff wash their hands regularly, and report any cuts etc!.
Regarding the chef who has this I think for safety sak I would have to sack him even though the risk of passing it on is minimal!.
A chef has to use knives so may get cut and aids HIV are passed on through infested blood, Yes I know the food is cooked which should kill the bacteria but that would be a risk that i wouldnt be prepared to take and he might be preparing salad!?!?!?
Another aspect, should the news get out that there was an infected person in my kitchen, my trade would collapse no one would care to eat in my dinerWww@Answer-Health@Com

First of all, HIV is transmitted when an infected bodily fluid like blood gets in contact with an open cut in your body!. for a chef who has HIV, the precaution is that there should be no cut!. You should also know that HIV can not be transmitted by eating something and also the virus itself does not do well with heat, so cooking the food get ride of the virus!. You might want to read more on HIV, there are lots of materialsWww@Answer-Health@Com
