Gluten free foods?!


Question: Gluten free foods!?
I am trying to find some foods that are gluten free,
I know that on a gluten free diet both rice and corn are allowed but I am unsure whether I can eat things like oats, potatoes, and spelt!.

Can anyone give me a list of gluten free foods!?

Also does anyone have any suggestions for replacing flour in baking!? I have tried rice flour and it comes out ok but things are very heavy!.

Also get Gluten Free Eating for Dummies!. It is a great starter book and any of the Gluten Free Gourmet books!. They are stellar!.
Spelt is right out, it has gluten!. No lactose for the next 6-8 moths while you grow new villi (lactase is produced at the tips of the villi)!.

this is the ONLY place where you can get cert gf oatmeal easily!.
Use the gf flour replacer!. And order the xanthum gum as well!.
Have you replaced all your pots, pans, spatulas, wooden utensils, cutting boards, etc!? stripped and resealed all your iron pans, eliminated gluten and soft scrubbed all your counters!? If you live with non celiacs, you will also need your own toaster, and replace your breadmaker (Cusinart has a gf bread setting)!. You MUST have your own gf area of the kitchen!. Bear in mind, gf is measured in parts per MILLION, so a total clean out is in order!.

p!.s!. please remember wheat free does not mean gf, and watch out for cross contamination (no quaker oats for you!)!.
Things are hidden everywhere, and just because a product has "no gluten ingredients" does NOT mean it is gf!. A few weeks ago I read a Wegman's mutivitamin label, claimed to be gf, and there is BARLEY GRASS right on the label!
Wow!. Now, technically the grass should be gf, but NO WAY is that possible!. If I can't have Quaker oats because of cross contam, there is NO WAY I can have barley grass!. Be careful, and be smart!.!. Oh, and if in the US, gluten will NOT be listed (just wheat is req!. by law) so do NOT use that as your guide!!.

I've never tried baking with it, but soy flour is a replacement for regular flour; maybe you could try that!. =)Www@Answer-Health@Com

IDK much about gluten free foods, but if you go to places like Whole foods and/or Wegmans, they got a ton of gluten free stuff!. They have pizza, bread, waffles, and other good frozen stuffr like frozen dinners!.!.etcWww@Answer-Health@Com
