You are probably referring to the salmonella outbreak currently affecting tomatoes from California and Florida!. Salmonella is a bacteria!. In which case, tomato sauce is safe to eat if prepared in an FDA-regulated factory!.

Tomato sauce is put through an "autoclave" process, similar to a huge pressure cooker!. This process destroys the salmonella bacteria, as well as any exotoxins that may have been produced while it was active!. Exotoxics are what can make people very sick!.

Home-made tomato sauce which is simply pasteurized (without a pressure cooker), may still contain some live bacteria!. It would also probably contain spores of various bacteria, many of which can live through pasteurization or insufficient autoclaving!. Tetanus and botulism both form spores and will thrive in the oxygen-deficient environment of canned sauce and cause a potentially lethal disease!.

Autoclave or pressure cooking are not required!. The heat from properly cooking will kill the salmonella bacteria!.

Tomatoes are currently being recalled because of risk of contamination with a bacterium (not a virus)!. Cooking kills the bacteria, so tomato sauce should be fine - it is pateurized before selling, so all bacteria are killed within it!.Www@Answer-Health@Com
