Answers:
1 carb choice or 15 carbs, means 60 carbs at every meal, which is a lot - are you sure that is the number they gave you!? In the beginning (just after diagnosis) they often give you a target number of carbs to go along with your insulin!. As you get more comfortable with carb counting, they will probably tell you to adjust your insulin to the number of carbs you actually want to eat!.
You should try to get into a class at the local hospital or talk to a nutritionist who deals with diabetes!. You should also get a pocket sized book for quick look-ups, we like the Calorie King version!.
But basically, in most foods, one serving size (the actual serving size, not what we usually think of as a serving size which is usually much bigger) is often 15 carbs!. Most fruit and pasta is 15 carbs for 1/2 cup!. Milk is 12 carbs per cup!. Veggies, unless you eat a lot of them, we don't usually count at all, except corn, peas, or potatoes (the starchy vegetables) which are all about 15 for 1/2 cup!. In the beginning you will be using a lot of measuring cups (it has been almost 3 years for my son and we still use them constantly)!.
You need to look at labels closely, especially bread because it varies a lot - from 11 g to 24g per slice!. Look at total carbs, then if there is a lot of fiber, subtract the amount of fiber and that is the amount you use!. I suggest that once you figure out the numbers in your favorite brands of bread, cereal, etc that you stick to that brand!.
It all sounds incredibly complicated, but believe me, once you start getting the foods you regularly eat figured out, it is a snap!. My son (who is now 5) sometimes quizzes me on carb counts and is amazed at how often I am right!.
So if you truly need 4 carb choices per meal, you are going to be eating something like (these are just examples, you need to check on the brands you buy:
Breakfast -
1 serving of cereal (usually between 3/4-1cup) - 25g of carbs
3/4 cup milk - 8 carbs
1 yogurt (sweetened) - 27 carbs
Lunch -
peanut butter and jelly sandwich with 2 slices of bread - 30 carbs
1/2 cup juice - 15 carbs
1 piece of fruit - 12-15 carbs
Dinner -
1 cup of pasta with sauce - 30 carbs
1 cup of milk - 12 carbs
1 piece of garlic bread - 15 carbs

Ask your doctor to refer you to diabetes education classes!. Most insurances will pay for these!. They evaluate your height, weight, your eating habits, and how much diabetes medication you are on and make an individual meal plan telling how many carbs to eat per meal!. I lost 1116 pounds this way, and kept it off for 8 years, and my blood sugars are almost always in great control!.Www@Answer-Health@Com
