Answers:
I'd say it's possible that you are reacting to mold that grows naturally on any types of cheeses!. A lot of cheeses, especially blue ones, use bacterias and molds to add to the flavor!. This can cause reactions in mold sensitive people, even if you don't see the mold!. Others, like cheddar, aren't blue but do have a higher mold content, enough to trigger a reaction!.

I'd avoid the cheeses, and get tested for allergies!. It could be that you're allergic to mold, which can be a pain since mold is all over the place!. It can also end up meaning that you could be allergic to penicillin, which is mold derived and can cause severe reactions to mold sensitive people!.

You might want to get some benadryl, and if you have a reaction again use that to help control it!. If you feel you can't breathe again you should get to the ER!.Www@Answer-Health@Com

yeah - it sounds like a pretty severe allergy!. i would never eat cheddar again if i was you!. so far you have been lucky and your throat has not closed!. i would recommend seeing an allergist to be sure and to identify any other allergies you may have!. i would also keep benadryl with me at all times in case of accidentally ingesting cheddar or something else that may affect you in that way!.Www@Answer-Health@Com
