Turns out the stuff is called "mother of vinegar" and is a mixture of bacteria-produced cellulose and yeast!. Six months in the bottle and it's going to happen!. That's the reason they pasteurize most vinegar -- people don't like snot floating in their food!.

Only thing I couldn't get a straight answer, is the vinegar, strained, safe to eat!. Most websites say it's harmless!. A few claim health benefits!. One says it's a sign the acidiity level fell and I should worry about e coli!. Www@Answer-Health@Com

Are you talking about apple cider vinegar!? It's the mother of vinegar!. It's a culture!. You can even decant the mother and add it to apple cider to make a new batch of vinegar!

It's entirely safe!. I try to avoid using it in my food, but just for texture reasons!.Www@Answer-Health@Com
