Question: My husband has been recently diagnosed with diabetes!.!.!.
And I need to change my way of cooking!. I am looking for some cookbooks, but I don't know if I should get a low-carb cookbook or an actual diabetes cookbook!. I have read that neither will be beneficial, and that I may just need to learn how to read labels!. Any guidance from you experienced cooks/chefs would be greatly appreciated!! I would like to have my husband around for a very long time!.!.!.!.Www@Answer-Health@Com

I like the South Beach cookbooks a lot!. they help a great deal in cutting grams of carb instead of concentratign on cutting fats and calories!.

All the diabetes cookbooks I have read especially those approved by the ADA are way too high in grams of carbohydrate!. They advise to eat just smaller portions of the regular food pyramid for our age groups with NO fats or salt!.

That just doesn't work for me!! I can drink a glass of no fat or low fat milk and my glucose will skyrocket to 300 and stay there for the remainder of the day!. But if I have cream on a tiny bit of cereal It is fine!. Tiny bit means 1/4 cup cooked oatmeal!. not enough for a good taste let alone hold the morning!.

Most of what you need to know is small servings!.

3 ounces cooked any kind of meat is about the amount in a chicken thigh!.
1 cup raw veggies or fruits is a serving
1/2 cup cooked veggies or fruits is a serving
1 slice of bread is a serving

All plant source foods contain carbohydrates!. Carbohydrates turn to sugars in the digestive tract then excess is turned into fat in the blood!.

for the immediate future just have meat and salads real salad dressing, and leave the potatoes, corn, carrots, peas, dried beans, breads and cereals , and soft sweet fruits out of your food planning until glucose control is achieved!. Then you can experiment with adding back some!.

take that slowly and test one food at a time, measured and prepared for snack time!. Test glucose, eat the food, and test glucose again!. If the blood sugars spike too much after 90 minutes to 2 hours, determine what you will do with that food!. delete it or have less!.

Do be sure to plan in a "cheat treat" once a week!. No matter what it is, just half a serving usually fixes the craving and there is no guilts because it was planned in!.Www@Answer-Health@Com

ive had diabetes for 20 years now!.!.and im a type 1!.!.insulin dependent!. you have to watch what you eat, essentially anything made from white sugar can pose problems to us, b/c of the carbohydrates, but it doesnt mean we have to totally not ever eat them again!.!.!.you will have to concentrate more on protein!.!.i eat a lot of chicken and fish and turkey!.!.i've never been much of a red meat person!. A lot of what you will have to learn is to limit portions, especially with carbs!. im sending you a link below from the ADA which should help with your questions!.!.good luckWww@Answer-Health@Com
