Gluten free diet, what am I allowed to have?!


Question: Gluten free diet, what am I allowed to have!?
My doctor thinks I might have Celiac Disease and wants me to start a gluten-free diet!.

Problem is there are so many food restrictions!. What am I allowed to have on this diet!?

I know at first it seems like almost all of the foods that you have been eating are getting cut out!. You just need to start being a little creative with your meals!. You can have a lot of the same things you did before, just with a little adjustment!.

Obviously, you need to avoid foods with wheat, rye, and barley!. They say oats have been debated but I eat oats and it doesn't bother me!. So, this cuts out all breads, pizza, pasta, cakes, cookies, brownies, etc!. All foods made with flour!. You also need to check ingredient labels for things like malt, modified food starch, barley malt extract, wheat flour, etc!. There's a lot of fillers in processed foods!. Most soy sauce and soups, for example, have wheat in them!. Maltodextrin is okay, as long as its made in the US!.

What can you have!? Well, lots of food! I still have hamburgers without buns and french fries!. I have oatmeal in the morning!. For snack, I have apples and peanut butter!. Gluten free pasta can be bought at almost any grochery store in the health food section and it tastes almost exactly the same!. I also eat a lot of Mexican food- corn tortilla chips (which are most tortilla chips) and salsa!. Also, enchiladas are made with corn tortillas as well as hard shell tacos!. I hope this helps! Just be a little creative!. It takes a while to develop meal options but once you have them, you will be fine!. Good luck!

PS- To feed my sweet tooth, I buy gluten free chocolate chip cookie or brownie mixes!. I usually add about a half of bag of extra chocolate chips to make it taste much better!. These are at almost any store in the health food section!.

Unfortunately, gluten is in a LOT of foods that are commercially available!. Fortunately, celiac disease is becoming more well known, so there are companies that put out entire lines of gluten-free foods!. Gluten is found in wheat, rye, barley, and oats!. (Some places say that oats don't have gluten, but most oats are processed in plants that also process the other grains, so contamination occurs - better safe than sorry!.) Rice and corn are okay!. If only it were that easy, though! Many products are made with processed wheat ingredients but don't list wheat on the ingredient list!. Watch out for modified food starch (modified corn starch is okay), maltodextrin, and vinegar (distilled vinegar may be okay for you depending on how sensitive you are, and cider vinegar is fine)!.

You'll find you spend most of your time in grocery stores reading the ingredient list!. There are websites that sell alternatives to many common foods, such as rice pasta, and rice flour!. There are also many gluten-free cookbooks out there!. It may be helpful to make several copies of a card emphasizing your strict dietary restrictions to give to the waiter at restaurants, so the cook will use clean cookware for your food!. Cross-contamination can happen very easily!. Just a crumb of bread can cause problems, and no, just picking the croutons out of a salad will not make it "safe!."

my dad can't have wheat so we have learned how to make foods with weird flours that don't have gluten!. They sell gluten free foods!. Just check out the health food isle in your grocery store and you should be able to find good food that doesn't contain gluten!. Www@Answer-Health@Com

Read carefully the label of food products!.

Watch out spelt and rye bread as well!. It almost always has wheat gluten added to make the dough stick together!.
