Its a very intricate process which I will try to explain in short form.

When you eat an allergenic food, your body releases "chemicals" to give your body the ability to fight it, which alters your body's chemistry temporarily. (Generally a rush of adrenaline, among other things)

However, if your body is being constantly bombarded by this allergen, and thus constantly in an altered chemical state, you can become physically & mentally addicted to the "chemicals" that your body releases when you eat that allergen. Thus causing you to "crave" that allergen, in order to keep the altered chemical state. Since these are normal body chemicals, this generally isn't seen on tests until it develops into an actual disease state, and by then the damage is usually done.

In addition to this, when you eat a food you're allergic to, your body doesn't digest it properly and you don't get the nutrition that normal people would have from a meal. If this happens repeatedly, your body will go into starvation mode and absorb what it can (mostly readily digestible sugars) and store what it doesn't need right now. Thus not allowing you to burn off any extra calories, as well as your body thinks its "starving" so you're going to get hungry again really soon.

The combo of these two processes, can make for a very very fat person in a hurry. Mostly this combination is due to foods that happen to be in every meal consumed whether we know it or not.. such as milk, wheat, corn, beans, eggs. These foods are generally eaten every day if not every meal, so the body never gets a break and mal-adapts to the situation (addiction).
