What happens to someone with coeliac that goes off their diet continually?!

Question:

What happens to someone with coeliac that goes off their diet continually?

I've been diagnosed with coeliac for about 10 years now and I still can't stick to the diet. I get very few side effects (that are noticeable anyway) but I know long term that problems can arise, such as memory loss. I also have type 1 diabetes so it's hard enough to stick to that diet, let alone cut out gluten as well.

What else can happen to me long term and how long before symptoms start rearing their ugly heads?

Answers:

Hey I didn't want your question to go unanswered, so here's a short list of complications relating to non-compliance of gluten intolerance: lymphoma, lupus, rhumetoid arthritis, depression, anxiety, anemia, B-12 deficiency, and other immune disorders (type-1 diabetes and Sjorgen's come to mind).
