Question: Will an endoscopy show if you have hiatal hernia?

I would think that it could but you'd have to check with a gastroenteroligist to be sure. Hiatal hernias can contribute to GERD (acid reflux) and I know that if GERD becomes a problem they can see evidence of that with an endoscopy.
