I have a rash from head to toe, I have strep throat and i'm taking amoxicillin for it (i've been taking it for a week now and i never had any rashes or anything before that)
the rash is really itchy and it's irritating me

It definitely sounds like an allergic reaction. It is possible that it only starts to show after a week of taking your antibiotic, or it could be caused by something you ate or your soap, etc.
You should see a doctor.
