Answers:

This is where I go for such things, I go with the low carb selections, a 2" x 2" piece is generally equal to one carb choice.

No such thing as a diabetic cake. You can look for sugar substitutes appropriate for baking but that is only part of the problem. The flour has carbs too. The fondant will also have carbs. For a person with diabetes all carbs are a problem not just sugar.
Most likely, you dad CAN have a piece of regular cake. He may need to take some extra medication to cover the carbohydrates, but for most people with diabetes, that isn't a big problem.

i would not use fondant - it mis pure sugar
if you live in the us you can go to tops grocery store - they sell sugar free cake mixes and sugar free icing
i have tried the chocolate cake and chocolate and it was pretty good

another suggestion if i may - i suggest you find out what foods your dad should be eating for future reference

sharon

shopping and looking for sugar free products and a good dietician

Make a real cake and use a lighter frosting. You could always leave the frosting off all together .
Just a dusting of powdered sugar.

I'm a diabetic and I LOVE CAKE! But only one slice every now and then with a large shot of insulin, but sure cake can be ok. Once in a while...
