How do you tell them apart? Like how do you tell the mood swings from Bipolar disorder apart from mood swings related to adrenal disorders?

There are too many conditions that affect mood to name. You can't tell conditions apart just by mood swings. They have to be diagnosed. Organic disorders are diagnosed by a medical doctor through physcial examination, blood tests, imaging and other diagnostic tests and bipolar is usually a differential diagnosis made by a psychologist or psychiatrist.
Start with a medical doctor first to rule out organic causes. If everything comes up negative, a referral to Mental Health is made.
