It depends. There are many different types of bacteria, viruses, toxins, parasites, etc.. that can cause food related illnesses. Each one has its own incubation period.
So, unfortunately...the answer to your question is a few minutes to hours, to days, to weeks.

That said, shorter incubations can be from bacteria like Staphylococcus ( incubation: 1/2 hour to 8 hours after you eat) and primary symptoms are stomach upset, nausea, vomiting, retching and sometimes headache. Doesn't usually last very long. Usually less than 8 hours.

Usually, with most foodborne illnesses....you wind up waiting for the illness to run its course. Drink plenty of fluids. Maybe some ginger ale or electrolyte replacements like pedialyte or gatorade. Rest.
