Reactive Hypoglycemia diet recipes?!


Question: Reactive Hypoglycemia diet recipes?
I was diagnosed by my doctor as a reactive hypoglycemic two months ago. She put me on an elimination diet of NO sugar/ anything that tastes sweet (though I can have two fruits a day), gluten, cow milk/ milk products, corn products, roots, peanuts, tomatoes, a limited amount of salt ...well, those are the big ones. I've gotten to the point to where everything tastes gross so I don't want to eat anymore, and then I get sick from not eating. I am tired of chicken, I've eaten way to much steak, and I'm dieing for something sweet! She is supposed to start adding things back into my diet once I've stabilized, but for now I need some help. Also, I used to be vegan and I want to do that again, but at this rate I don't think I'll be able to eat anything.

I need some recipes! Please, if anyone knows even just one recipe that follows this diet that doesn't taste like dirt I will love you forever! I really need some sweets too, but that seems almost impossible without cheating.... The only cheating I will do is a very small amount of agave nectar ... as in a couple of tablespoons.

I almost forgot... I've hated veggies since I was born no matter how they are cooked, so if anyone knows any vegetable dishes that aren't soggy, or you know taste like vegetables I would appreciate it.

Sounds like your typical low glycemic index diet. With slight modifications, you could follow Dr. John McDougall's "The McDougall Plan" or Dr. Joel Fuhrman's "Eat To Live" plan. Both should give you some good ideas. Staying away from processed foods would be your best advice. I cannot see where peanuts are going to give you a reaction. If you're "dying" for something sweet, eat an apple. It has a very low glycemic index, tastes great, and is nourishing.
