Chicken recipes: Healthy yet tasty?!


Question: I've been trying to eat healthy and have been eating chicken. If I try to eat bland chicken and salad, I run the risk of not being satisfied and doing something dumb (like eating half a box of cookies). I basically like hearty food with some kind of sauce, and italian food. How can I make chicken taste good while keeping it reasonably healthy?

Tonight I reheated chicken with a slice of cheese and salami on it with a big salad on the side (olive oil and vinegar); maybe not super healthy but it actually did taste good and I think I'm satisfied for the night (with some V-8). What are some good compromises between 'tastes good' and 'healthy' that will satisfy my apetite. I'm thinking of chicken recipes, but it could be anything.

1. Marinate it in lemon juice, olive oil, dash of soy and a tsp of honey....this is really tasty. Barbecue or pan fry. (Frying is ok if you use a little olive oil and use chicken breast as it is lean anyway.) (Skin off!)

2. Make a fresh salsa with a tomato chopped, some cilantro and a little chopped red onion and a dash of red wine vinegar to have with plain grilled chicken.

3. Make or buy 'dukkah', a mix of sesame seeds, macadamia nuts, cumin and coriander seeds and pepper ground to a course mix, press onto chicken breast and grill or pan fry in a small amount of olive oil.

4. Make ratatouille (spelling!?) to have with it. Fry onion, add chopped eggplant, chopped red and green pepper (capsicum). Add tin of chopped tomatoes (no added salt or sugar type). Add salt & Pepper to taste and some mixed dried herbs. Cook for about 25 minutes in pot till veg are cooked. Make a big pot then you can eat it the next day too!

Just a few ideas.....

tastes good does not exclude healthy.....
try browing / caramelizing onion and garlic together and prepare your dish that way.... use one herb, like rosemary if you like it .... or thyme and bay which are good with chicken.... and serve it with brown rice which always gives strength......

Why not grill it and add some fresh salsa? It's really yummy and goes well with salad or rice

Add rice, salsa and a little red wine vinegar...maybe some extra onion if you'd like...it makes a yummy salad. You can even sub cherry tomatoes for the salsa.

get a chicken breast,,put a hole in the centre,,
and fill it with a bit of cheese with spring onoin,chopped bacon,broccoli or cauliflower,,bit of garlic,,or whatever peas
and corn,,seal the hole up and cover with seasoned
breadcrumbs and bake in oven for 20 mins till brown
nice and healthy,and tasty,,,,,you can stuf fit with ever you like
