If you want to build some muscle strength, size and endurance, a good average is to perform 3 or 4 sets of 8 to 12 reps.

This should be done with 3 or 4 workouts for each muscle group. For example, to work the chest you could do bench press, incline press and wide grip dips on chest day.

Add variety as you progress to work the muscles from different angles, which also incorporates other connecting muscles.

Now, for your question about how much weight to use:
For each set, you should lift as much weight as you can for the number of reps you are performing.

So, if you are doing 10 reps in a set, then the 10th rep should be just about all you can safely do.

If your general goal is 3 sets of 8 to 12 reps, than you might actually do 12, 10 and 8 reps as your muscles fatigue with each set.

Add weight when it becomes too easy to perform your desired number of sets and reps.

An added note: For endurance, do more reps of lighter weight
For strength, add weight and do less reps.

At your age, I would keep a medium amount of reps and try to stay in all-around shape. Keep your muscles healthy and strong, but don't strain them trying to max out with super heavy weights.
