Gluten is a protein in wheat, rye, barley, etc. For some people (like me), eating gluten causes adverse reactions. Being gluten free means that you do not eat any foods containing gluten. Cut out flour, wheat germ, barley, rye, malt extract, etc. Food manufacturers sometimes hide gluten in their ingredient list under 'natural flavors,' so it is important to know which manufacturers you can trust.

Safe to eat: any fresh veggies and fruits, or frozen/canned without additives containing gluten, meat and fish, provided the meat has not been injected with anything containing gluten, rice, gluten free pastas and breads (a bit pricey, but not bad). Dairy products are usually fine, but annato coloring in yellow cheeses may contain gluten, so you would need to check with the manufacturer.

Finding suitable substitutes for your favorite gluten containing foods isn't that hard. Check local health food stores for gluten free foods and baking mixes.

well in short all proceesed foods &
foods that contain flour you can not have.
the glluten free diet has been getting more and more notice the past couiple of years..and more and more stores are carring gluten free products
and there is acouple of stores in the Chicago area that only sell gluto free products
also on of the personalties on WGN radio is pon the same diet
and some time ago put stuff on his WGN Blog
