What is the healthiest taco salad?!


Question: what are some ingredients to make it healthy but tasty?

(i have baked tortilla chips, low fat sour cream, salsa, pepperjack cheese, veggies, beans...)
any ideas? and ideas of how many calories/much fat it would be? thanks

First of all, cut out the tortilla chips. I know it sounds crazy, but it will absolutely taste like a taco salad, even without the chips! If you must use them, I recommend breaking some of them up into the salad for crunch without having to use a lot, or at the very least, limit the amount you use.

Try to focus on your lettuce as your base. Leaving it in bigger, torn chunks is a good substitute for chips, instead of shredding it really fine. The cheeses are okay (try to stick to low-fat cheese, not much taste difference), black beans are the healthiest, although low-fat refried beans are okay. Pico de gallo is an excellent topping! (Mixture of tomatoes, onions, a little bit of pepper I think, and herbs). Keep the sour cream to a minimum, if you don't eliminate it all together (or use a low/nonfat dairy substitute to help with the health benefits). Olives are also a great addition to a taco salad, either slices or whole.
