It may be that you are losing more fat then you think. If you are checking abdominal fat as your way of figuring out fat loss this can be very inaccurate. There is a lot of sub cutaneous fat, inter muscular fat, and fat around the organs and spine. Fat around the belly and butt is often times the last to leave.
Also it is very difficult for some people to put on a lot of muscle mass, be sure to take in 20-25 grams of protein, 5-6 times a day, while also taking in enough calories.
Many people do not eat enough, or often enough to optimize muscle growth, and lose lean mass as a result, try 25 calories per pound of the body weight you want to achieve.

The workouts coupled with the no carbs are doing it. Simply up your carb intake a bit with whole grains and eat more high calorie proteins, such as nuts, avacodos, peanut butter, cheeses, etc.

I believe in balanceing your proteins with your carbohydrates and fats. Try eating 7 gm of carbohydrates for every 9 gm of proteins and 3 gm of fats. The carbos should be the 'good' carbo. Not empty sugars or white bread.
