It's not that simple.

First of all, what do you mean by "healthy" butter?

The good news: Potatoes are high in potassium and other minerals and vitamins.

The bad news : Potatoes have a high glycemic index, which means they are treated like simple sugars by the body.

Conclusion: Potatoes are a healthy part of a balanced diet, but eaten in excess (more than one each day) they can cause weight gain, and blood sugar problems in diabetics.

Try them with cheese and broccoli, or sauteed onions and sunflower seeds, for a healthier topping than butter.

Potatoes are just carbohydrates, i.e., the same thing as eating bread or crackers.

Potatoes are healthy food, especially with their skin. Instead of butter, try "I Can't Believe its not Butter" spray.
