Question: I buy it in bulk but I'm not sure how much a single serving measures out to, I usually use a super heaping tablespoon in my morning smoothie. Is this too much/too little?

Kitty, a serving is usually around 1/3 of a cup. That's about five tablespoons.
Typically, a serving contains around 20 grams of protein. One tablespoon probably isn't enough. I'd go with a full serving.

That's odd that it didn't have a scoop in it.
You may have to measure it in grams on a scale.
