note: make an open-faced sandwich at all times- meaning that instead of 2 slices of wholegrain bread, have only 1, taht way you save excess calories! =)

Yeah that sounds pretty healthy to me :)
Mind you, If your looking to lose weight I'd only have the Aero chocolate mousse about once, or twice a week, for a treat :), But apart from that it sounds good indeed! Next time why don't you try including some salad or vegetables and fruit into it :)
It sounds pretty good to me. The only thing with no nutrition is the mousse, but since it's just a once-a-day treat I don't see anything wrong with it.
where are the vegetables? you need more variety in your diet. deli ham is certainly not the healthiest choice, but okay for once in a while.
