The intervals refers to periods of time during the cardio exercise that alternate between relatively high and low intensity as measured usually by heart rate.
For example, say you like to jog for 30 minutes during cardio exercise. You get your heart rate up to about 170 beats per minute after about five minutes and you keep it there for a couple of minutes, then you slow down to 150 for a couple of minutes, then back up again to 170 for a couple of more.
Doing Interval training according to a lot of fitness experts is good for teaching your cardiovascular system how to adapt to different levels of stress.

AnInterval cardio routine is a cardio work out with both high & low resistance parts to it.

Eg
Jog sprint jog sprint jog Sprint jog in equal parts over a set distance.

OR say on a Stepper
Level 6 for 1 min L 12 1 min L6 1 min etc

Interval cardio routines are just doing a cardio exercise like running or riding an exercise bike in short bursts. Like running at a fast pace for 1 minute then walking for 1 minute. By doing this you burn more calories then just running at a set pace for 30 minutes.
