What is the best exercise equipment that is low impact on your knees?!

An Eliptical!

Because you don't have the pounding that you get from running on a treadmill... or the large amounts of flexion from using a stair climber it's much easier on the knees.

It's a fluid motion where your weight is kept pretty evenly on both feet.

I like the eliptical... I feel like I can get into a groove and go for longer than I do with running!!

Elliptical is good as far as knees go, but it isn't as strenuous as jogging, unless if you want an easy workout.

While ellipticals are great for knees, I would recommend a rowing machine. With a rowing machine there is no impact on the knees, it works pretty much all the major muscles groups (arms, legs, abs, back), and it combines strength and aerobic training.
