Question: i know the quality of protein in eggs is very high. i was wondering if i take out the yolk does the quality of protein in that egg decrease?

Yes. It does decrease and you loose important nutrients. However two egg whites can often be used to replace one egg yolk in protein value. So if your worried about your cholesterol and want to stay on a high protein diet...double up on your egg whites to get the same amount of protein as a whole egg.

In fact, the slew of nutrients in an egg yolk is so comprehensive that a few a day would offer better insurance than a multi-vitamin. Most importantly, the yolk contains most of the nutrients in an egg.

yes...the whole egg is considered natures perfect food as there is a synergistic effect when both the yolk and white are consumed at once. also remember that the protein content is split 50/50 between the yolk and white so you are losing not just all of the fat from the yolk but 1/2 of the protein.
