How to gain muscle?!

Question: I'm 6'2'' 195, I'm trying to hit 210 for the past two years. I just can't seem to break the plateau of 195 lbs.
The first year I worked out, I gained 25 lbs instantly, now I can't gain any weight no matter what I do. Please don't recommend creatine, all that does is fill you with water and has no permanent effects.

What you've described are what i call newbie gains. It becomes much harder to gain weight after you've been working out a while. So don't be surpised, that is pretty common. Try changing your routine every 6-8 weeks. Don't forget to include workouts that increase total mass, like squats, leg press, deadlifts, bench(i prefer dumbbells) and lundges. Be sure to be eating enough of the right foods too. Your body needs an excess in calories. From your weight and heighth, i imagine you need around 4000 calories or so. You'll need even more if you're doing cardio too. Try and get around 200 grams of protein a day also. And last but not least, you might need more sleep. You'll need at least 8-10 hours. Its probably one of the most over looked aspects of weight training. Your body doesn't start repairing itself until you go to sleep. So be sure to get plenty of it.

Proteins...

exercise and yes creatine does work I've spoken to a doctor about it.
