2 of my & my husband's fav. recipes
Zuchinni alfredo
parmesan tacos

use fresh cheese for both, not the stuff out of a bottle, what cheese you don't use i finish grating it up and freeze it for later use

take a vegetable peeler and peel the green off of the zuchinnis and throw away or if you want to keep some slice them into smaller pieces
keep slicing down the full length of the zuchinni until you are down to the center (toss the center as it's a little tough)
all of these threads of zuch. look like noodles
in a saute pan place a little butter let melt then throw in "noodles" let cook till as tender as you like
alfredo: heavy cream, crushed garlic, parmesan or asiago or ramano cheese grated, a small dash of crushed cayene pepper
heat cream & garlic to just below a boil allow to thicken slightly then add cheese till you get a consistency you like
serve over "noodles"

parmesan tacos
make up your taco meat as you like and have your additional condiments you like for it
take grated parmesan cheese and spread a thin layer on the bottom of a skillet (or a crepe pan works great) allow cheese to melt some then flip it over to finish the other side
once the cheese taco shell is nicely melted remove from pan and fold up like a taco shell and fill it up and enjoy
this one is a cheese lover's paradise

This is sort of a take off of the low carb diet. You can lose 10-25 pounds in one month... safely. Just follow these rules.

I lost 92 pounds, down from 325 lbs. The first week I started eating this way I lost 8 pounds... but it was probably because I was so big to begin with.

The rules are...
Food group 1
Fats, meats, oils, cream, butter

Food group 2
Veggies (no avocado or potatoes or carrots, these turn immediately to sugar when they hit your saliva).

Food group 3
Carbohydrates, rice, pasta, potatoes, non fat milk.

Food group 4
Fruit, eat only in the morning, on an empty stomach, about an hour before breakfast, not after. Don't eat it at night.

Rule... eat anything from group 1 with anything from group 2.
Rule... eat anything from group 2 with anything from group 3.
Rule... Do NOT eat group 1 with group 3.
Rule... No soda, caffeines, whole milk, yogurt, avocados, bananas all of these have fat and carbos so when you want to lose weight don't eat them. Afterwards you can.

Picture this in your head, insulin from your pancreas is secreted, to help digest sugars, and anything digested with it will be 'stored' as fat. So if you want the pasta and bread, don't have the butter or oil or meat, instead have a marinara tomato sauce, or sauted veggies with garlic, no oil or butter with carbos... remember.

O.K. here is my advice. Never listen to group one, group two or group three. Let's create more lists and combinations and try to make this as difficult as possible. I think everyone has way too much time on their hands. I have made a career in the fitness industry for 21 years (and counting) and I sometimes want to grab people by the shoulders, shake them and ask "what are you thinking?".
Here are the facts: carbohydrates DO NOT make you fat, fat makes you fat. The reason that people think that carbohydrates make you fat is because they are eating way too many total calories and not exercising enough. Do this and you will get fat, regardless of which of the 3 macronutrients you eat (carbohydrates, protein or fat). Your body NEEDS carbohydrates in order to function. Low carb diets are effective in the short term only because they typically reduce your total caloric intake. I just hope you can stay away from carbs for the rest of your life. Doesn't sound like fun, does it? If you reduce your total caloric intake, cut down on the amount of fat, sugar, fast food and junk food in your diet, I bet you can eat a normal amount of carbohydrate and still maintain a healthy weight.
A healthy diet consists of 55-60% carbohydrates, 20-25% protein and 15-20% fat. You should eat 4-6 small meals each day (think grazing) and each meal should contain all 3 macronutrients. Drink lots of water (+64 ounces each day) and move, move, move!
The bottom line is that if you do not consume some carbs then your body WILL NOT burn off your existing fat stores. Your metabolism (the rate at which your body burns calories both at rest and while you are up and about) will slow considerably. This is the main reason people experience the "yo-yo" syndrome of losing weight and then gaining it back. Get your metabolism to work with you and weight management will be a breeze, I promise.
